Let me start by saying I love Pimiento Cheese! I recently talked to my grandmother and she was telling me how they made their Pimiento Cheese by using words like "some" cheese and "a little bit of" jalapenos. Unlike my husband, who can throw things together by "taste" and make them wonderful, I require direction! I also am somewhat OCD and really feel I need concrete measurements and clear step by step instructions to make things the "correct" way. So, with my grandmothers help we found a recipe in May's issue of Southern Living. If you have ever read this magazine you know that they like to make things from scratch but their recipes always turn out fabulous. The recipe I found not only had the regular ingredients but onion, pecans and jalapenos. I was really just craving good 'ol "plain" pimiento cheese. So I took the recipe and omitted a few things.
One of their suggestions was to not use pre-shredded cheese because freshly shredded cheese made a difference. One thing I learned from this is that I need a new "good" grader =). BUT freshly shredded cheese is SO good!MY (kinda spicy!) Pimiento Cheese~
Ingredients:
1 1/2 cups Mayonnaise
1 (4 oz) jar diced pimiento, diced
1 teaspoon Worcestershire sauce
1/4 teaspoon ground red pepper
1 (4 oz) jar jalapenos, diced
1 (8oz) block extra-sharp cheese
1 (8oz) block sharp cheese
Directions:
In a large bowl stir together mayonnaise, pimiento, Worcestershire sauce, red pepper, and jalapenos. Shred the cheese and add to the mixture. Can store in refrigerator for up to 1 week.
*Warning- this is SPICY so omit the jalapenos and/or red pepper if you don't like spice. I love hot foods so it tastes wonderful to me!Doc and I have been spending lots of quality time together since Tyler has been studying all summer. That recipe looks delish! I am also a p. c. purist, but my gosh, that looks good enought to try.
If you hollow out a purple cabbage, and stuff it with the cheese, it makes a great appetizer. Crackers on the side.
And one more thing...I never use pre-shredded cheese. Do you know how they keep the shreds from sticking to each other? Cellulose. Wood fiber. It's on the label!
