A Happy Ending

Our summer is ending soon but it has a happy ending...Tyler got his score back on his boards and did really well! He is pleased with himself and I am proud all of his hard work payed off! I go back to work Friday and Tyler starts his first rotation (Internal Medicine) Monday. Our lives will be back to "normal" and summer vacation will be over (sad!). I am excited and scared to see what this year of rotations brings. Each month Tyler will be rotating to a different specialty and therefore have a different schedule each month. He will be doing several of these rotations (including his first one) in Bluefield, WV, which is about 1.5 hours away. Depending on his schedule he will be staying in WV during some of these months. I know everything will work out as it should...I can't believe he is half way done!!!

In other news I tried out a recipe I borrowed from one of my fellow hometown bloggers. It was so good so I thought I'd share (I'm sure she won't mind!). Thanks Stephanie for such a great recipe!

INGREDIENTS:
4 skinless boneless chicken breast (about 1-1/4lbs)
1 egg (slightly beaten)
3/4 cup of Italian bread crumbs
1 cup Parmesan or Mozzarella cheese
1 jar (26oz) Marinara Sauce
DIRECTIONS:
*Preheat oven to 400 degrees
*Dip chicken in egg, then bread crumbs, coating well
*In a 13x9in glass baking dish, arrange chicken
*Bake uncovered 20 minutes (+25 degrees for metal pan)
*Pour the marinara sauce over chicken, then top with cheese
*Bake an additional 10 minutes or until chicken is no longer pink
Serve if desired, with hot cooked pasta
Makes 4 servings
